Creamy Cashew Hummus
With just a handful of ingredients and a food processor, whip up this creamy and tasty dip in minutes.
Makes a lot of hummus, so maybe make half.
You'll need:
- 3 cups raw cashews
- 1/2 lemon juice
- 2 small garlic cloves
- decent amount of Supper Supply "Main Squeeze" Extra Virgin Olive Oil
- 1/4 cup unhulled tahini
- 1 tsp Maldon salt
- 1 cup water
- Soak cashews in water for 2 hours
- Add all ingredients into a food processor and blend
- As it's being processed, dribble in the olive oil. Make it as runny or tasty as you like.
- Spread on a small plate, add more EVOO and throw on some parsley.
